CLIVE & LIESEL BATTELL

General Managers

Clive & Liesel opened Knysna Hollow Country Estate on 1 July 1998 and have managed the property together ever since. Clive manages the daily front-of-house operations while Liesel takes care of all admin-related responsibilities as well as caring for our beautiful indigenous gardens. Both Clive & Liesel believe in offering friendly, personal service and work daily with Knysna Hollow’s capable Team to ensure that all our guests have a wonderfully memorable stay.

Danie joined the Knysna Hollow Team in 2003 and oversees the day-to-day operation of our Food and Beverage Department. With a hands-on approach and an eye for detail, Danie makes sure that all aspects of our guests’ dining experience at Knysna Hollow exceeds expectations.

Executive Chef

Also a member of the Team since 2003, Grant is responsible for the wonderful food at Knysna Hollow. Managing a Team of fifteen staff, Grant works constantly at providing fresh, locally-sourced produce which appears on our tempting breakfast buffets and on our seasonal a la carte lunch and dinner menus. Offering much more than standard fare, Knysna Hollow’s cuisine continually earns enthusiastic praise from our guests thanks to Grant and his Team’s commitment.

Reservations Department

Stanileta has managed reservations at Knysna Hollow for more than 10 years and, together with her Assistant, Claudene, make sure that prompt, efficient and friendly service are the order of the day when it comes to making a booking at Knysna Hollow.

Reception

Cheryl and Lee-Andri run our Reception desk at Knysna Hollow and are the first point of contact for most of our guests when arriving to stay with us. Warm, enthusiastic service, assistance with any aspect of your stay and help with all the things to see and do in the Garden Route area – this is where Cheryl and Lee-Andri excel!

Assistant Restaurant Managers

Martin and Francois are the friendly Managers in our Restaurants working together with our waitron team and our bar staff to make sure that our guests have a superb dining experience. Whether it’s a wine recommendation required, a special arrangement for a special occasion or simply a change of the channel to view your favourite sport in our Pub, Martin & Francois are there to assist you.

Christine and Portia make a formidable pair and between them manage Knysna Hollow’s Housekeeping Department. Ensuring guest’s rooms are spotless prior to arrival and managing every aspect of room requirements for all 79 rooms is their key priority.

Barmen

Julius and Lucky are our duo of stars in our bar – on-hand for over 12 hours a day between them, they serve up some of the best locally-brewed beer and an assortment of seasonal cocktails, providing a great vibe with their polished service.

Chefs

Working together with Grant, our Executive Chef, this Team of culinary pros serve up a very high standard of food at Knysna Hollow. From our daily Breakfast Buffet to the tempting choices on our a la carte menus, this is the crew that produces the goods!
